Diet is the second pillar of my cancer defense. I am NOT a nutritionist or a dietitian, however I do know what worked for me.

This was eating as “clean” and organic as possible, with an emphasis upon fresh vegetables and limiting red meat regardless of its origin. Admittedly, there is only anecdotal evidence regarding the correlation of red meat consumption and cancer incidence, but I am of the opinion why take the chance?

We also eat one vegan meal per week which we call “Meatless Monday”  We have added another meatless day, with good organic vegetable soups served with baguette slices, cheese and organic salad garnished with pickled beets. When we eat meat, it consists a lot of wild organic seafood and organic chicken.

Finally, after our visit to France in September 2019 when Pam raced in the 70.3 Ironman world championships, we have adopted a European style of eating. This means much smaller portions, lots of organic veggies, good cheese, (we did visit France after all), baguette rounds and, of course, a glass of good French vin rouge! I am not suggesting that the glass of wine is particularly healthy, but I like it and it is my indulgence.

As a result, I will say that we both feel better and have much more energy eating like this.

Additionally one spice that we have both added to our diet is turmeric. Its anti inflammatory properties are well known in East Asia and clinical studies have shown that it can significantly help in reducing the incidence of several cancers. It can be taken as a powder with a “pinch” of black pepper which releases or unbinds the curcumin in the gut or in a pill supplement form with the black pepper already included.
